Vanilla is an aromatic spice originating from Mexico used mainly in the preparation of some sweet foods, delicacies and beverages. It is a fermented capsule (incorrectly teat) of some species of orchids of the genus Vanilla.
The most important ingredient in vanilla is the aromatic phenolic aldehyde vanillin, which is responsible for the pleasant aroma and sweet taste of this spice. Due to the high price of natural spices, it is also produced synthetically as a substitute, but it is less delicious and has a sharper taste than the natural aroma, which contains many dozens of other organic substances. Therefore, in Czechoslovakia, its derivative ethyl vanillin was developed and patented in the middle of the 20th century as a more suitable substitute.
